The series ranks like this for me (on PC) Mafia (2002), Mafia II (2010), Mafia: Definitive Edition (2020), Mafia III (2016-2020). the original 2002 game is still hands down the single best video game experience I ever had and I originally played it when it was new in 2002 and here and there over the years since. it never fails to deliver a great experience.
Sara - Definite Edition by far. Felt like an actual character in DE instead of just an accessory to Tommy like the original. Ralphie - Draw. I think both were good for the character being played but I feel like we got a lot less Ralphie in the DE since you weren't learning how to lockpick a bunch of different stuff. Vincenzo - Definitive Edition. And when I hear that there was a mafia game I imminently bought the trilogy pack and expected an amazing ride for the game but it wasn't what had intended as the game didn't feel all that exciting and was a copy and paste of the original so these are my reasons of why Mafia Definitive edition underwhelmed me. 1: The characters. Hell no. The remaster is terrible. It doesn’t change the graphics that much,but it introduces hundreds of gamebraking bugs. Just keep the original. Maybe buy the DLCs separately if you want. Wow it has more bugs that sucks I'll just replay the original and (as you suggested) buy the DLCs separately thank you.
It comes with the original release of Mafia 2, so just play that instead. Definitive edition has a few difficulty settings and while racing is better a doable on lower settings, it's still bullshit on classic difficulty. A little bit better, but still will make you sweat. Something interesting. The og racing was difficult because developer was making a "realistic" racing game and used steering wheels .

I have 16,98€ on Steam and all the Mafia games and a lot (or all) Assassin's Creed games are on sale, but I have no clue what to get. I originally wanted to get Mafia: Definitive Edition for the nice graphics, but I've already played 2-3 hours of the original one and I don't know if it's worth getting the game and playing those hours all over again.

It's worth it since you getting it for the pc you can tweak the game to your liking with mods. It is, assuming you have played the original before. Amazingly, the remake manages to reproduce the good aspects o the original, as well as the bad ones. Indeed, the gameplay is very rough and pretty basic.
